Then when you want more, you switch it all to red belt and steel furnaces to get a full red belt. i.e. The same setup can be upgraded in place. I think without upgrades you need 30 mines per belt of stuff.

Super basic steel smelting setup. Red belt ore in, 1/5 red belt steel out. If you want to run on yellow belt, downgrade to stone furnaces or cut off the top half if you're concerned about fuel efficiency. Edit: If it doesn't keep up with your demand, build another column. If the ore doesn't keep up, build more mines.

Mining post smelting is easier if you're going to use electric furnaces and has a higher train to put because iron plates stack up to 100.
