Now, i could always go rogue or swashbuckler with fighter dedication, but that requires 14 STR, which kinda breaks my stats allocation, as it forces to drop constitution (ok for the rogue i guess but not the swashbuckler) ... Building Laios in pathfinder 2e - Part 2

The trick to martial weapons on Ruffian is generally to pick up something like Mauler, which has scaling proficiency and crit spec when you're expert+. You're still limited by Agile or Finesse to get sneak attack, though, which means you're limited to d8 anyway. There's not much out there that's much better than Longspear for Ruffians.
