DDO being a game full of confusion, particularly for new players. Though simple testing (as you mention below) shows otherwise: you never know, this could get fixed in the near future to reflect the tree, rather than the buff bar.

Both are full caster classes, so you rarely want to multiclass heavily (1-3 level dips can be good if you have a plan). They have melee options, but Cleric melee is mostly War Domain for Holy Sword, whereas Eldritch Knight is fairly imbue-based.

The two classes share some similarities such as the master list of available spells, but there are a few key differences: A Sorcerer learns spells instinctively, unlike Wizards who learn by studying.Strimtom has a TWF tempest ranger build that uses heavy maces. I am currently running it at cap and it is a lot of fun. I originally went with it because I had a Beacon of Day/Beacon of Night set that I wanted to use and it is surprisingly effective at end game. Maces are a trap. 1.23 APs adds medium armor proficiency (more AC/PRR and no MRR cap) and -35% ASF total. Air sorc first life might have some issues with enemy reflex saves in higher difficulties (elite or r1) at higher levels (level 20+). Hence, if you're new to playing one, gearing for spell casting provides for a quicker return on investment. Alternative idea: Take 2 levels of Artificer and 18 Wizard.
